Lumpiang Gulay is a Filipino dish that features crispy spring rolls filled with a medley of vegetables. This vegetarian version of spring rolls is deliciously savory and served with a flavorful dipping sauce.
Ingredients
- 500g Vegetable stir-fry (Carrots, Green Cabbage, Beansprouts, Red Cabbage, Red Peppers, Sweetcorn)
- Medium size Spring rolls wrapper
- 2 gloves garlic, minced
- medium size onion, chopped
- 1 tsp. Salt
- 1 tsp pepper
- 200g Ready to Eat Cold Water Prawns (Shrimps)
- 2 tbsps. Cooking oil and cooking oil for deep frying
Directions
- Sauté Garlic and onion in hot oil.
- Add Shrimps sauté for 2 minutes
- Add mixed Vegetables, add salt and pepper and stir fry for 5 minutes
- Adjust the taste add more salt and pepper if necessary.
- Let it cool for room temperature.
- Then wrap using spring rolls wrapper.
