Vegetable spring rolls – Lumpiang gulay

Vegetable-springrolls–Lumpiang-gulay

Lumpiang Gulay is a Filipino dish that features crispy spring rolls filled with a medley of vegetables. This vegetarian version of spring rolls is deliciously savory and served with a flavorful dipping sauce.

Ingredients 

  • 500g Vegetable stir-fry (Carrots, Green Cabbage, Beansprouts, Red Cabbage, Red Peppers, Sweetcorn)
  • Medium size Spring rolls wrapper
  • 2 gloves garlic, minced
  • medium size onion, chopped
  • 1 tsp. Salt
  • 1 tsp pepper
  • 200g Ready to Eat Cold Water Prawns (Shrimps)
  • 2 tbsps. Cooking oil and cooking oil for deep frying

Directions

  1. Sauté Garlic and onion in hot oil.
  2. Add Shrimps sauté for 2 minutes
  3. Add mixed Vegetables, add salt and pepper and stir fry for 5 minutes
  4. Adjust the taste add more salt and pepper if necessary.
  5. Let it cool for room temperature.
  6. Then wrap using spring rolls wrapper.
