- 900g/2 lb fresh spinach
- 2 tbsp. peanut oil
- 2 garlic cloves, crushed
- 1 tsp chopped lemon grass
- Pinch of salt
- 1 tbsp. dark soy sauce
- 2 tsp brown sugar
- Heat the oil, reduce the heat slightly and sauté garlic and lemon grass for 30 seconds.
- Add the spinach and salt and stir-fry for a further 1 minute.
- Add the soy-sauce and sugar and cook for further 1 more minute.
- Transferred to plate and serve with immediately
