Lechon Paksiw is a Filipino dish made from leftover lechon (roast pig) or lechon belly. Instead of reheating the lechon as it is, it is transformed into a savory-sweet and tangy stew using vinegar, liver sauce, and various seasonings.
Ingredients
- 1 kg Lechon leftover, cut into big cubes
- 2 gloves Garlic, mince
- 1 1/2 cups of Lechon sauce
- 2 tbsp. soy sauce
- 1 small bay leaf
- 1/2 tsp. peppercorns
- 1/4 cup vinegar
- 40g brown sugar
- 1/2 up pineapple juice
- 1/2 tsp. salt
Directions
- Combine all the ingredients except lechon sauce.
- Cover and simmer for 20 minutes.
- Add Lechon sauce, and simmer for another 5 minutes.
- Serve and enjoy!
