Lechon-paksiw–Lutong-pinoy

Lechon Paksiw is a Filipino dish made from leftover lechon (roast pig) or lechon belly. Instead of reheating the lechon as it is, it is transformed into a savory-sweet and tangy stew using vinegar, liver sauce, and various seasonings.

Ingredients 

  • 1 kg Lechon leftover, cut into big cubes
  • 2 gloves Garlic, mince
  • 1 1/2 cups of Lechon sauce
  • 2 tbsp. soy sauce
  • 1 small bay leaf
  • 1/2 tsp. peppercorns
  • 1/4 cup vinegar
  • 40g brown sugar
  • 1/2 up pineapple juice
  • 1/2 tsp. salt

Directions 

  1. Combine all the ingredients except lechon sauce.
  2. Cover and simmer for 20 minutes.
  3. Add Lechon sauce, and simmer for another 5 minutes.
  4. Serve and enjoy!
