Caldereta is a Filipino stew known for its rich and savory tomato-based sauce. It is often made with beef, although it can also be prepared with other meats like goat, lamb, or pork.
Ingredients
- 1 kg Beef , cubed
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 medium onion, sliced
- 1 tsp peppercorn, cracked
- 2 bay leaves
- 1 tsp. Salt
- 1/2 cup liver spread or liver pate
- 1 cup tomato sauce
- 2 cups pineapple juice
- 2 cups of beef broth
- 2 cups Carrots, sliced
- 2 cups Potatoes, sliced
- 1 medium red bell pepper , sliced
- 1 tsp chili flakes (optional)
- 2 cups vinegar (for marinate )
Directions
- Marinate the beef with vinegar, salt, pepper for at least 1 hour.
- Saute garlic, onion in the skillet until soft.
- Add the drained marinated beef and cook for 5 minutes or until the the color turn brown.
- Combine dried bay leaves and the remaining salt and crushed pepper corn.
- Mix liver spread and cook for 1-2 minutes.
- Pour-in the tomato sauce, pineapple, juice and beef broth. Bring to simmer for 1-2 hours or until the beef becomes tender.
- Add potatoes and carrots and cook for 5 minutes.
- Drop in green olives and bell pepper
- Add chili flakes (optional).
- Simmer covered for another 5 minutes.
- Serve with boiled rice and enjoy.
