Dinakdakan Recipe

Dinakdakan is a popular Ilocano dish from the Philippines, often described as the Ilocano version of sisig. It typically features grilled pork parts, such as pig's ears, snout, and tongue, mixed with onions, chili peppers, and other flavorful ingredients. The dish is known for its rich and spicy taste.


  • 1/2 pig head/face, (Crispy Pata leftover)  cut into two parts
  • 1 thumb size ginger, chopped finely
  • 4 medium size onion, chopped finely
  • 3-4 pcs. siling labuyo, chopped finely
  • 1/4 cup vinegar
  • 1/2 cup mayonnaise
  • coarsely ground pepper
  • salt


  1. Toss in ginger, onion, siling labuyo, ground pepper, vinegar and mayonnaise.
  2. Season with salt to taste.
  3. Serve while it’s still warm or serve on a sizzling plate.
