Ilonggo Adobo refers to a version of the classic Filipino Adobo that comes from the Iloilo region in the Visayas, Philippines. While Adobo recipes can vary across regions and households, the Ilonggo version often includes coconut milk, making it distinctively rich and flavorful.
Ingredients
- ½ kg chicken, cut into serving size
- ½ kg pork, cut into serving size
- 5 cloves garlic, minced
- 1 medium onion, sliced
- 1 tsp peppercorn, cracked
- 3 tbsp. kalamasi or lemon
- 1 tbsp. achuete (annatto) <- BUY
- 1/2 cup water
- 1/4 cup oyster sauce or ¼ cup soy sauce and 1 tbsp. brown sugar.
- 4 bay leaves
- Salt
- 1 tbsp. Oil
Directions
- Add enough water to cover chicken and pork and add 1 tsp. salt.
- Put chicken and pork in boiling water and simmer covered for 20 -30 minutes. Removed the meat and cool. Save the broth for later use.
- Cut chicken and pork into serving pieces.
- Sauté garlic , onion and ginger.
- Add chicken and pork sauté for 5 minutes.
- Prepare the Annatto seeds by adding warm broth and soak in for 20 mins.
- Add 2 bowls broth to the meat, add lemon juice , bay leaves, cracked black peppercorn, oyster sauce and achiote/Annatto.
- Simmer covered for 5-10 minutes, medium heat.
- Add chilli flakes (optional).
- Simmer covered for another 5 minutes.
- Serve with boiled rice and enjoy.
