Arroz Valenciana is a festive Filipino dish that is often served during special occasions and celebrations. It is a flavorful and colorful rice dish that incorporates glutinous rice, meat, and various ingredients. The dish is thought to have Spanish influence, particularly from the region of Valencia, which is known for its paella.
Ingredients
- 1 1/2 cups rice
- 1 cup glutinous rice (Sticky rice)
- 200gms medium shrimps or mix seafood
- ½ kg chicken, cut
- ½ cup olive oil
- ¼ kg pork, diced
- ½ cup ham, diced
- 1 pc. Chorizo de bilbao or chorizo sausage, sliced
- 3 gloves garlic, crushed
- 1 medium onions, chopped fine
- 1 tsp. fish sauce
- 1/2 cup tomato sauce
- 2 cups rice, washed and drain
- 4 cup broth
- 1 pc red pepper, cut in strips
- 2 tsps. Salt
- 1/2 cup peas
- 2 hard cooked eggs
- 1 spring onion
- sliced lemon
- ½ tsp. ground black pepper
Directions
- Heat olive oil in a deep heavy skillet or paellera. Brown chicken and pork over medium heat.
- Sauté garlic and onions , add ham and chorizo or sausage. Cook for 2 minutes.
- Add rice, browned chicken, pork and fish sauce, sauté for 4-5 minutes. Add tomato sauce and boiling chicken broth. Mix well and let to a boil.
- When rice is haft way done drop the red bell pepper , Lower down the heat and cook covered until all liquid is absorbed by the rice.
- Turn rice over and add shrimps and peas. Cover and cook for another 5 minutes.
- Adjust the taste and season with salt.
- Garnish with hard cooked eggs, spring onion and sliced of lemon.
